For those mid winter days or nights when you're not that hungry and just want to eat something healthy, refreshing and full of flavour, this is the perfect solution.
It's time to enjoy the fleeting kumquat season in this simple salad:
- organic arugula or baby arugula
- organic kumquats
- toasted pine nuts (quickly pan fried in a little olive oil)
- diced gruyere or other medium-hard cheese
- olive oil, dijon mustard and a little balsamic or red wine vinegar whisked together for the dressing
It's easy to eat an entire container of arugula and a handful of kumquats this way. Don't be surprised if you go back for seconds and thirds.
